Glorious Lemon Tart

Lemon tarts… If you know, you know. This is probably one of the easiest basic recipes out there that is almost fool-proof! I’m salivating thinking about it....


What you need:

  • 150ml Lemon Juice
  • 150g Unsalted Butter
  • 250g Caster Sugar
  • 4 eggs
  • 1 Small Tart Shell (You can buy these from your local Coles/Woollies or make your own! The world is your oyster)

What to do:

  1. Pop all the ingredients (excluding the tart shell) in a pot and cook on low-medium heat stirring constantly until thickened and can coat the back of a spoon.
  2. Pour into the tart shell and set in the fridge for at least 1 hour or overnight
